Yalla, let’s eat Mexican Street Corn Salad! This recipe is a twist of my friend Ingy’s recipe (thanks girl). This recipe is GREAT for a bbq or a potluck. You can add it to your burger or as a side all on it’s own because it’s DELISH honey. Don’t have a grill? Stick your corn in the oven on broil till you get the same effect:) so so so good guys try it today with the chili and lime seasoning from Trader Joes or the Tajin spice!
Yalla, Let's Eat Mexican Style Street Corn!
Serves: 13-15 people
Ingredients:
8 ears of fresh corn (grill it it's worth it)
1/2 bunch of chopped cilantro
1/2 cup of mayo
1/2 cup of mexican crema
1 cup of crumbled cojita cheese
1/2 of a medium red onion chopped
1 charred jalapeño chopped
The juice of one lime
1 teaspoon of chile lime seasoning
1/2 teaspoon cumin
1 teaspoon salt
1/2 teaspoon cayenne pepper (or less)
1 teaspoon paprika (can add more)
1/2 teaspoon of chili powder
Directions:
Husk your corn and grill in with your jalapeño. Set it aside to cool. Then cut the corn along side the core (watch the highlight lol)
In a big bowl add all your ingredients.
Taste, season accordingly and yalla let's eat!
